Sanjay, Assumptions are very dangerous. PHC can only do so much. The "FATBODIES" that gain it all back obviously missed the whole point. As the old saying goes, Give a person a fish, they eat for a day. Teach a person to fish, feed them for a lifetime. Obviously, the "FATBODIES" went to Captain D's. Think about that...

actually, PHC does a great job at the education piece. the nutritionists do their best to teach you appropriate eating habits as well as teaching you about yourself and how and why you eat. all you have to do is be open to the change as well as be willing to listen.

Be sparing on the soy and olive oil and be sure to start the green beans first or microwave them in a closed glass bowl with a spot of water for about 2 minutes. use high heat and short cook time to retain the most flavor and nutrients.

I would have to ask the chef at Earth Fare! Although I can guess and would be healthier with tilapia or cod. Use minimal amt of olive oil and salt free blackening for the fish. Sweet potatoes appeared to have been parboiled and finished off in a skillet (olive oil again or cooking spray) toss in some cranberries and pecans and a pinch of brown sugar substitute and I would put just a hint of cayenne pepper - I like it hot, baby! Finally on the green beans...the ones on the show weren't particularly healthy (I could tell they had too much oil on them). But beans, onions, almond slivers and red bell pepper (cut length wise and thin) should do the trick. Saute with cooking spray and again with teaspoon of O. oil, use a splash of white wine to deglace the pan when nearly done and then splash low sodium soy or terriyaki near the end of cook time.
